The 1996 Les Ormes de Pez seems to have mellowed since the last time that I tasted it: mulberry and a touch of dried fig, a touch of allspice coming through with time. The palate is fully mature with fine tannin, quite saline and almost brine-like, tapering in slightly towards the finish. It is a little "serious" like some 1996s tend to be, a touch of Sichuan pepper on the finish. I would drink this sooner rather than later. Tasted July 2016.
